5 Vegetarian Lunches That are Ideal for a Busy Shift

When you’re a busy healthcare professional, you don’t always have much time in-between shifts to think about your lunch options. You need lunch to be faff-free, quick, and nutritious, so you feel satisfied and energised after your break and ready to tackle the afternoon.  

Are you lacking lunchtime inspiration? If so, in celebration of Cancer Research UK’s Veg Pledge this November, we’ve put together a list of 5 vegetarian quick and easy lunch recipes to fuel your busy shift at the hospital:

1. Avocado club sandwich

This is an easy sandwich recipe that’ll ‘hit the spot’ and provide fuel for your busy day. An avocado club sandwich is full of flavour – the combination of creamy avocado, crunchy lettuce and the rich cheese will make this a definite lunchtime favourite in no time.

2. Vegetarian chilli con carne with Quorn mince

As it gets colder here in the UK, there’s nothing better than reheating a tasty veggie chilli to warm you up and give you some much-needed energy for the afternoon ahead. This is a rich and hearty lunch option, which is most certainly packed with flavour but has fewer calories than its meaty alternative.

Who doesn’t love chickpeas? They are versatile and high in both fibre and protein - perfect if you’re feeling that midday lull.
