5 Vegetarian Lunches That are Ideal for a Busy Shift

When you’re a busy healthcare professional, you don’t always have much time in-between shifts to think about your lunch options. You need lunch to be faff-free, quick, and nutritious, so you feel satisfied and energised after your break and ready to tackle the afternoon.

Are you lacking lunchtime inspiration? If so, in celebration of Cancer Research UK’s Veg Pledge this November, we’ve put together a list of 5 vegetarian quick and easy lunch recipes to fuel your busy shift at the hospital:

1. Avocado club sandwich

This is an easy sandwich recipe that’ll ‘hit the spot’ and provide fuel for your busy day. An avocado club sandwich is full of flavour – the combination of creamy avocado, crunchy lettuce and the rich cheese will make this a definite lunchtime favourite in no time.

2. Vegetarian chilli con carne with Quorn mince

As it gets colder here in the UK, there’s nothing better than reheating a tasty veggie chilli to warm you up and give you some much-needed energy for the afternoon ahead. This is a rich and hearty lunch option, which is most certainly packed with flavour but has fewer calories than its meaty alternative.

3. Chickpea spinach salad

Who doesn’t love chickpeas? They are versatile and high in both fibre and protein - perfect if you’re feeling that midday lull. We recommend trying this chickpea spinach salad – the spinach will also add vitamins A, C & E to this tasty lunch option. If flavour and health are important to you, this could be a regular go-to lunch choice.

4. Spicy black bean soup with crusty sourdough bread

This vegan lunch will definitely leave your work colleagues feeling jealous! Spicy black bean soup is quick and tastes really fresh thanks to the carrots and celery. It’s packed with flavour and tastes delicious reheated. Finish it off with a slice or two of crusty sourdough bread, and you’ll be ready to tackle your busy afternoon.

5. Lentil quinoa salad

Are you looking for an amazing lunch salad that’s not only healthy and quick, but filling too? Then this lentil quinoa salad is what you’re after. It can be pre-made at home at lightening speed and will travel well in your lunchbox. Lentils and quinoa are both a great source of protein and fibre - fuelling your busy afternoon on the ward. Plus, the flavour is delicious!
